Ever since I was little I have loved to bake. I have a huge sweet tooth and honestly would eat a dessert after every meal if I could. Even though I enjoy experimenting in the kitchen with new recipes I am also a fan of food being convenient. That’s where baking mixes come into the picture. A super convenient and delicious way to whip up cookies, cakes and treats in no time! I have been buying Pamela’s Products baking mixes for so many years and I love how they are always gluten-free and for the most part they are vegan! I just wanted to talk about the three products I have used and loved from their company this last month!
First off, cupcakes.
I wanted to try making coconut caramel cupcakes a couple weeks ago so I went out and purchased Pamela’s vanilla cake mix and dark chocolate frosting. I whipped coconut oil, cream and flakes into the vanilla cake mix and once my cupcakes came out of the oven I covered them with a coconut caramel sauce. As for the frosting I used coconut oil and vegan butter to make the chocolate frosting have a light coconut taste. I was so impressed with these two baking mixes. The vanilla cake mix honestly smells exactly like cake batter ice cream (and how cake batter should smell…mmm) but I am a frosting lover so the dark chocolate frosting definitely stole the show for me. These cupcakes turned out amazing and with help from the baking mixes were super quick to make! I love how there are so many different cupcakes/cakes I could make all from one mix, and I will keep on experimenting 😉
Next up, potstickers.
Other than sweets potstickers and spring rolls may be my favorite foods. I started making potstickers at home this year. I was surprised at how easy they were to make (and how amazing they are!!!) but one problem I kept running into is that the dough I would make would break or be to crumbly. This is a common problem I have noticed with all gluten-free flours and foods, they seem to be more dry. But, this last week I made potstickers (I only got pictures of the dough unfortunately) and I used Pamela’s All-Purpose Flour Artisan Blend, my mom gave it to me as a present for my birthday and I wanted to try it out! It was very stretchy and “gluten-y” ha! I haven’t ever worked with gluten-free flour that felt that much like the real deal! It made beautiful dough, and made the cooking process less frustrating. The potstickers turned out delicious and and the dough was crispy and dumpling like! Yum!
