One of the first things I ever learned how to make was pesto. I spent a lot of my younger years coming home from school and watching the food network. I would watch the recipes and try to recreate them for my parents so they had dinner ready when they got home from work. Pesto is by far one of the simplest recipes out there but there are so many additions that can make this pasta pop! Today, I will be sharing with you one of my favorite pesto recipes that is vegan, nut-free and gluten-free!

LEMON PESTO PASTA
Makes 2 servings & Prep time: 10 minutes, Cook time: Follow the directions on the box of your chosen pasta.
- Box/package of your favorite gluten-free pasta (I used this one)
- Juice of one lemon
- 1 cup of fresh basil
- 1/4 cup of olive oil
- 3 cloves of garlic
- salt and pepper to taste
- Start off with bringing a pot of salted water to a boil, pour in your pasta and let it cook for the recomended time.
- While your pasta is boiling, take out your food processor and pulse together your garlic cloves, basil, lemon juice, olive oil and salt and pepper. Yay pesto!
- Strain your pasta and mix in your pesto sauce. That’s it!
